Selecting a Blade Type
* Stamped-bladed knife: This type has a thick blade along the back side and is categorized as a stiff boning knife.
* Forged knife: The blade on this knife tapers in thickness away from the handle, making it more flexible.
Selecting a Handle Type
When looking at the knife handle, notice how far down the blade continues on the handle and what kind of casing the blade is in (generally plastic or wood). This makes the handle either lighter or heavier and is also reflected in the price (heavier, sturdier knives are more expensive).
